Vegan Zucchini Bread

Don’t be shy; jump right in; this one is really easy to make…


I usually relegate myself to “above-board” cooking, i.e. the stove top. Other than the occasional baking / roasting of veggies, I rarely use the oven – let alone that murky world of baking. But I made this and it came out great!! I did switch out / augment a few things here and there. I used banana instead of apple sauce, added medjool dates and maple syrup and cut back on the sugars, and that’s mostly it.

Ingredients
1/2 cup granulated sugar
1/3 cup brown sugar
1 cup unsweetened applesauce
1/4 cup vegetable oil
1 tsp vanilla extract
1 1/2 cup all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp cardamom
1 heaping cup shredded zucchini, (1 medium zucchini)
1/2 cup walnuts
