Week #4: Class Replay

In this week’s class (64 min 08 sec) we examine (a) super foods, and (b) starch-based diet vs nutrient-based diet. Thereafter we briefly examine transitions, family concerns, and food prep. Finally, we welcome Elizabeth who discusses her 30-year career as a food scientist working with blueberries.

Week #2: Class Replay

This week’s main talk (51 min 18 sec) focused on the transformation of the American Diet from 1950 to 2020, and with it the extreme rise in coronary heart disease, the #1 killer. We also delved into how a plant-based diet can reverse the harm of a lifetime of eating meat.
