Eating Healthy Recap

Yesterday’s Eating Healthy: Foods that Nourish Body and Mind was an out-of-sight experience. Bethanne and Kenny did an absolutely masterful job! It was so far beyond that all I can say in this blog post is that you just HAD to be there. It was beyond words and beyond photos.

During the seminar, which featured among other things, three different salads, someone shared with me that, “No one could ever have imagined that this is a salad or that a salad could be like this. It was on the menu ahead of time, but no one who read that menu and saw the term “salad” could ever believed it could be this!”

While this next idea was on my mind earlier, that person’s reflection confirmed and solidified what I was thinking. Next time, the menu will not be printed ahead of time. Because one’s preconceptions of those terms will lead one into thinking, “I know what that is.” Just know that when(ever) this seminar is offered, you will be treated to an experience like no other.

Really, what Bethanne and Kenny presented yesterday was beyond verbal and visual description. Those who came were treated to a great learning, tasting, and living experience.

Thanks to everyone who came out – thanks for your energy and enthusiasm – and we shall see you at the next one! If you were one of those who did not or could not make it, definitely put this on your list for next time. The occasion is great and the ongoing benefits immeasurable!!

I will leave it to those who came to give their play-by-play description of what they liked best…

  1. Still dreaming of that banana raspberry ‘ice cream’ and Kirk raved about the lentil stew we brought home…thanks Bethanne and Kenny for a great afternoon!

  2. This was my second Healthy Eating seminar – and they keep getting better! I was pleasantly surprised that Bethanne and Kenny used options other than soy, which I don’t always digest well. The food was flavorful and beautiful – and simple to make. I’m about to dive into my leftovers and look for the food videos they suggested: “The China Study”, “Food Matters”, “Forks Over Knives” and “Fat, Sick & Nearly Dead”. Thanks!
