A salad from my waitering days where I learned that shredded beets and shredded carrots over greens make a great salad. Here the greens are green kale and green leaf lettuce – and then toss in a bunch of cubed tofu and that is the whole thing.

Mixed organic greens, hemp seeds, raw organic sunflower seeds, pecans, almonds, walnuts, organic bread & butter pickles, olive & pepper relish, organic carrots & cukes.

The ultimate hot-n-cold salad!!! All local, all organic…
HOT: steam cubed tofu and cubed eggplant untill the eggplant can be mashed fully….then add diced tomatoes for a short spell and let sit with no heat.
COLD: chop head of green leaf lettuce.
DRESSING / SAUCE: apple cider vinegar, ground flax seed, black pepper, cumin, ginger, nutritional yeast, sea salt, water…mixed into a moderately thick paste.
MIX: Add all ingredients together into a pot, stir thoroughly and serve.

A salad for the ages….totally fresh and all locally grown (organic).
Green leaf lettuce from @lancasterfarmfresh ; three types and colors of sweet bell peppers and two kinds of tomatoes from @debshrawder ; plus home grown broccoli and red clover sprouts.
Dressing you ask….well homemade of course: tahini, black pepper, ginger, sea salt, ground flax seed, nutritional yeast, balsamic vinegar.

Here is our latest salad, a free-wheeling Nicoise. The fish, which could be omitted, is Bay rockfish roasted whole for dinner, then mixed with homemade mayo the next day. Tomatoes are the first from Billâs garden. Beans are also home grown, but our cucumbers gave out early this year so this is from Chesapeakeâs Bounty. Also involved are romaine lettuce (ours ended two weeks ago), carrot, tiny potatoes, olives, Brussel sprouts, eggs, Sue Kullenâs pickled onions and crackers. Bill calls it Salad in Danger because it is about to be gobbled up.
