Here is what we’ve received thus far for The Salad Challenge – we’re awaiting yours….

[#05] Satyam writes: 

Lightly steamed zucchini & tofu (mashed) in cumin, coriander, ginger, black pepper – then add raw tomatoes, butterhead red lettuce, topped and mixed in with nutritional yeast, Bragg’s Liquid Aminos, apple cider vinegar, tahini, and olive oil. (All ingredients local & organic.)

We had our salad challenge this week… This is what the kids came up with (with help from some cookbooks too!)…..

Ellie’s salad featuring: Mixed Greens, Pear, Tangerines, Avocado, Mango, Pecans, Pomegranate Seeds

Evan’s salad featuring: Mixed Greens, Butternut Squash, Apples

Dressing for both salads: Lemon, Olive Oil, Apple Cider Vinegar, Salt and Pepper, Dijon Mustard

The last of the lettuce from the garden, washed, dried and ripped not chopped. Nasturtium leaves and flowers, all from the garden. I like to add fresh tomatoes when they become ripe, and early in the season, radishes. The dressing is as follows: pour into a small jar some olive oil, red wine vinegar (or any kind of vinegar,) a spoonful of Dijon mustard, a big clove of minced garlic, some chopped fresh tarragon. Screw the top on the jar and shake wildly. Dress the salad sparingly. Sometimes I add a little feta to the salad , some kalamata olives and a few nuts. Oh, and sometimes beets 🙂 Garnish with fresh herbs such as basil and parsley.

My spin on a Greek salad:
romaine and spinach
kalamata olives
pistachios
chia seeds
feta cheese
dill – from the garden!
olive oil & balsamic vinegar
sea salt & pepper
(if I’d had a cucumber I woulda thrown that in too!)
